This recipe of banana nut bread is a low-cholesterol, vegan alternative to your everyday banana bread. By replacing the eggs with real bananas, we are taking out fat and adding flavor and increasing the nutrient benefits one could get out of a slice of the bread. And it's very easy to make!
1 box of Banana Bread Mix (recommended: Trader Joe's brand)
1 banana for every egg the box calls for
1/2 cup of oil
Use a fork to mash the banana well, not leaving any large chunks. Mix the banana, oil, and box mix all in one bowl until combined well. Put into a greased bread pan and bake according to the instructions on the box.
